I’m a big fan of one pan recipes, especially ones that involve pasta of any kind. Although many pasta dishes can be heavy and filled with bloat-inducing ingredients. This orzo recipeis an exception. This Skillet Orzo with Spinach, Beans and Lemon recipe I discovered over at Bush’s Beans has just enough pasta without going overboard, and the orz is combined with a healthier combination of ingredients. It’s quick to make for a last minute dinner or make ahead and keep refrigerated for a tasty lunch to take along to work.

This easy skillet orzodishis quitesatisfying, to say the least. It is theperfect meatless option. For anyone planning for Meatless Monday menu, this orzo recipe is just the ticket. Plus, since Bush’s Beans offers low sodium varieties, low-sodium Great Northern beans were used to lower the overall sodium, which helps reduce possible inflammation and that overall icky puffy feeling. Because bloat is never a fun thing. The extra sodium wasn’t missed in this recipe one single bit. The lemon, red onion, garlic mingle together to create enough flavor for a well-balanced dish. No extra salt required.

The original Bush’s Beans recipe called for using Garbanzo (Chickpeas) beans, but I substituted the Great Northern beans. You could easily substitute your favorite bean in this dish, as well as use another citrus for flavor. Recipes like this are so fun to play with and create a different combination each time.

This orzo dish works well for a light meal or as a side dish. Make a large batch and refrigerate ahead to serve cold or quickly rewarm. If I worked in an office and packed my lunch daily, this is exactly the kind of meal I would take.

Skillet Orzo with Spinach, Bean and Lemon Recipe

Total Time: 15 minutes

This easy and tasty one-pan meatless recipe is great for a side dish or as a lighter main dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 small red onion, chopped
  • 3 cloves garlic, chopped
  • 1 (15-16 ounce) can BUSH’S® Great Northern Beans drained (low-sodium beans may be used)
  • 1/2 cup cooked orzo
  • 1 lemon, juiced
  • 2 cups fresh spinach, chopped or 12 ounces frozen, thawed and squeezed to drain
  • salt and pepper to taste
  • optional: 1/2 cup crumbled feta cheese

Instructions

  1. Heat oil in a 10-inch skillet over medium heat. Add onion and garlic; cook until almost clear.
  2. Add beans, orzo, lemon juice and spinach. Season with salt and pepper to taste. Simmer 4-5 minutes.
  3. Optional: Serve topped with cheese.

    Just to double check, is the orzo supposed to be cooked before adding it in with the beans, lemon and spinach?
