This Zucchini Parmesan Recipe was inspired by a home grown zucchinis that we got from the sweetest lady from my church.
This is a delicious Zucchini Parmesan Side Dish! A one easy zucchini recipe with just 3 steps. First you sauté bacon, then you sauté corn, onion and zucchini together in the bacon grease until tender texture. Toss in bacon and cheese and woala, zucchini side dish is done. It is super delicious!

Ingredients YOU will need to make EasyZucchini Parmesan Recipe:
- 4 bacon slices, cut into small pieces
- 1 medium size zucchini, cubed about 2 cups
- 1 cup fresh corn
- 1 small onion, chopped
- ¼ cup Parmesan cheese, grated
- salt and pepper to taste
How to Cook Zucchini
- Using a medium size skillet on a medium heat, add bacon and cook until browned. Drain and transfer the bacon to a plate lined with paper towel, reserve 1 tablespoon of bacon grease.
- In the same skillet preheat 1 tablespoon of bacon grease and cubed zucchini, onion, and 1 cup of corn kernels. Cook on medium heat for about 10 minutes, or until tender texture.
- Season with salt and pepper to taste. Sprinkle with cooked bacon and grated Parmesan cheese. Serve warm. Enjoy!
